Tuscan Tuna Pasta

Adapted from My Recipes

Buy It:

  • Uncooked pasta, about 8 oz.
  • 1/2 cup chopped red onion
  • 1/4 cup thinly sliced fresh basil
  • 2 plum tomatoes, diced OR 14 oz. can diced tomatoes
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons grated lemon rind
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 cans white albacore OR chunk light tuna in water; drained

Do It:

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat half of the oil on medium-high heat; add onion. Cook until browned slightly, then add remaining ingredients to pan. Add pasta, and toss to coat. Eat it up!
